Quick crock pot meals are a life saver in my house right now with all the hours I’m working with Christmas at the flower shop. I never thought I would be able to make a pesto dish my husband would eat let alone like. I have said this many times before; he either wants fried foods, or steak and potatoes. And he generally runs from anything green.
Pesto Ranch Chicken is one of my favorite quick crock pot meals. It is full of flavor, quick, and easy. All things I like in a week night meal. I have not mastered my own pesto recipes just yet, but it’s now on my to do list for sure. When I make this, I use my own homemade ranch dip mix because I always have some made up, but left the directions using the packet. Your choice!

Also, please know that the chicken parts are interchangeable. Don’t like breast? Don’t use them! You can easily change out the chicken parts for something your family likes better or whatever is on sale. Enjoy!
Quick Crock Pot Meals – Pesto Ranch Chicken
- 3-4 chicken breasts or chicken parts of choice
- 6oz jar pesto sauce or homemade
- 1 package ranch dressing packet or homemade
- 1 can chicken broth or chicken stock
Mix all ingredients and cook on low 6-8 hours.
Serve over rice.
**Note** To make this a freezer meal, simply add all ingredients to a ziplock bag and mix. Lay flat to freeze. Thaw in fridge overnight and add to the crockpot in the morning.
