Sugar Free Strawberry Poke Cake

Sugar Free Strawberry has quickly become a favorite of my mom’s to make since finding out my dad is a diabetic. I still have not figured out if it’s his favorite cake but he sure he sure eats a big piece every time we make it. And no my mom is not diabetic, she just freaks out every time my dad eats sugar or a carb. The recipe came from my sweet Aunt Betty and I’m just positive she said it was a Weight Watchers recipe, but I have searched¬†the internet far and wide and can not find a copy of this recipe.

Diabetic Friendly Strawberry Poke Cake

It’s important for a sweet love turned diabetic (like my dad) to have something they can still eat and not feel deprived. That’s why this Strawberry Pole Cake is so awesome. It uses sugar free cake mix and sugar free jello.

I feel for my dad and all diabetics. I was borderline gestational diabetic with my second son and just needing the second test was enough to scare me straight. Strawberry Poke Cake Recipe

Ingredients:

  • 1 box of sugar free yellow cake mix
  • 1 big box of sugar free strawberry Jello
  • 1 carton Cool Whip
  • 1 carton strawberries, sliced

Directions:

  1. Bake cake as directed on box in either 1 rectangle cake pan or 2- 8″ round cake pans
  2. Let cake cool
  3. Make strawberry Jello according to box, let cool slightly
  4. Pour Jello over cake
  5. Refrigerate cake for 2 hours
  6. Icing cake with Cool Whip
  7. Top cake with sliced strawberries

And tada!!! That’s it!
